Veggie Melt on Toasted Bread

Preheat a skillet or grill pan over medium heat.

Brush both sides of the zucchini, red bell pepper, and red onion slices with olive oil.

Grill the vegetables for about 2-3 minutes per side until tender and slightly charred.

Toast the bread slices until golden and crisp.

Place the grilled veggies and sliced tomato evenly over one slice of toasted bread.

Sprinkle with salt, pepper, and optional herbs or chili flakes.

Top with shredded cheese and cover with the second slice of toast.

Place the sandwich back in the skillet, cover with a lid, and heat until the cheese is melted.

Slice and serve warm.
