Preheat oven to 425°F (220°C). Bake the tater tots according to package instructions, until golden and crispy.
In the meantime, season the ground beef with garlic powder, onion powder, salt, and pepper. Shape into 12 mini patties, about 1 inch wide.
Cook the mini patties in a skillet over medium heat for 3–4 minutes per side, until fully cooked through.
In the last minute of cooking, top each patty with shredded cheddar cheese and cover the skillet briefly to allow the cheese to melt.
Assemble the mini cheeseburgers: Place a cooked patty between two tater tots, add a pickle slice, and top with a dab of ketchup, mustard, or mayo (if desired).
Secure each mini burger with a toothpick and serve immediately as appetizers or party bites.
