Jamaican Cabbage

Prepare the Cabbage:
Remove the outer leaves of the cabbage and chop it into thin strips or shred it. Set aside.

Cook the Onion and Garlic:
In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds, stirring to avoid burning.

Sauté the Cabbage:
Add the shredded cabbage to the skillet and sauté for 5-7 minutes, stirring occasionally. If you want the cabbage to be tender, you can add a bit of vegetable broth or water to steam it while sautéing.

Season:
Season with salt, pepper, and thyme (if using). Stir well and let it cook for another 3-5 minutes until the cabbage is tender but still a little crisp.

Serve:
Serve the Jamaican cabbage as a side dish with rice and peas, jerk chicken, or any main dish of your choice.
