Golden Garlic Butter Roasted Potatoes

Preheat the oven to 400°F (200°C).

Wash and halve the potatoes.

In a bowl, toss the potatoes with olive oil, salt, pepper, coriander, paprika, and breadcrumbs.

Place the potatoes cut side down on a baking tray lined with parchment paper.

Add the garlic cloves (with skin on) around the potatoes.

Roast for 35–40 minutes until golden and crispy.

Drizzle the melted butter over the hot potatoes right after baking.

Garnish with chopped fresh parsley if desired and serve warm.
