Garlic Herb Salmon with Asparagus and Potatoes

Preheat oven to 200°C (400°F).
Line a baking tray with parchment paper or lightly grease it.

Prepare the potatoes:
Toss halved baby potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 15 minutes.

Season the salmon:
In a bowl, mix olive oil, garlic, oregano, thyme, lemon juice, salt, and pepper. Rub the mixture over the salmon fillets.

Add salmon and asparagus to the tray:
Push potatoes to one side, add the salmon fillets, and place asparagus next to them. Drizzle asparagus with a little olive oil and season with salt and pepper.

Roast everything together:
Return tray to oven and roast for 12–15 minutes, or until salmon flakes easily and potatoes are golden.

Serve:
Garnish with lemon zest or Parmesan if desired. Serve warm.
