Garlic Butter Chicken with Parmesan Rice

Prepare the Parmesan Rice:

In a medium saucepan, combine the rice and chicken broth. Bring to a boil, then cover and reduce the heat to low. Simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.

Stir in the Parmesan cheese, butter, salt, and pepper. Keep covered and set aside.

Cook the Chicken:

Season the chicken tenderloins with salt, pepper, and garlic powder.

In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for 4-5 minutes on each side, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

Make the Garlic Butter Sauce:

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.

Return the chicken to the skillet and spoon the garlic butter sauce over the chicken. Let it cook for another 2-3 minutes, allowing the flavors to meld together.

Serve:

Serve the garlic butter chicken over the Parmesan rice. Garnish with freshly chopped parsley if desired.
