Preheat the oven to 350°F (175°C). Grease and flour a 9x9-inch (23x23 cm) baking pan.
In a large bowl, whisk together the eggs, melted butter, sugar, and vanilla extract until smooth.
Stir in the cocoa powder, flour, baking powder, salt, and cinnamon (if using) until well combined.
Fold in the diced apples and optional walnuts or chocolate chips.
Pour the batter into the prepared baking pan and spread it evenly.
Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
Let the brownies cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Cut into squares and serve.
