Zucchini and Vegetable Patties with Yogurt Sauce

Prepare the Vegetables:
Grate the zucchini, potatoes, and carrot using a box grater or food processor. Squeeze out any excess moisture from the zucchini to prevent soggy patties.

Make the Patty Mixture:
In a large bowl, combine the grated zucchini, potatoes, carrot, mozzarella cheese, chives, breadcrumbs, and egg. Season with salt and pepper to taste. Mix everything until well combined.

Form the Patties:
Take small portions of the mixture and shape them into round patties with your hands. You should be able to make about 8-10 patties, depending on size.

Fry the Patties:
Heat olive oil in a skillet over medium heat. Fry the patties for about 3-4 minutes per side, or until they are golden brown and crispy.

Prepare the Yogurt Sauce:
In a small bowl, mix together the yogurt, lemon juice, garlic powder, salt, and pepper. Stir until smooth.

Serve:
Serve the patties with the yogurt sauce on the side. Enjoy!
