Simple Zucchini and Chicken Patties

Start by cutting the chicken fillets into small pieces. Place them in a food processor and pulse until the chicken is finely chopped.

Make the Batter:
In a mixing bowl, whisk together the eggs, mayonnaise, flour, chopped parsley, salt, and black pepper. Stir until everything is well combined.

Combine Chicken and Batter:
Add the finely chopped chicken to the batter and mix everything until evenly distributed. The mixture should be slightly thick but easy to work with.

Form the Patties:
Using your hands, take small portions of the mixture and shape them into patties, about 2-3 inches wide.

Cook the Patties:
Heat a little oil in a skillet over medium heat. Once hot, add the patties to the pan and cook for 3-4 minutes on each side, until golden brown and cooked through. Make sure to cook them in batches to avoid overcrowding the pan.

Serve:
Once the patties are cooked, remove them from the pan and place them on a paper towel to absorb excess oil. Serve warm with a dipping sauce or as a main dish with a side of vegetables.
