Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare the Potatoes:
Peel and dice the potatoes into bite-sized cubes. Place them in a large mixing bowl.
Season the Potatoes:
Drizzle the olive oil over the diced potatoes. Add the oregano, garlic powder, paprika, salt, and pepper. Toss the potatoes well to ensure they are evenly coated with the seasonings.
Bake the Potatoes:
Spread the seasoned potatoes onto the prepared baking sheet in a single layer. Bake in the preheated oven for 20–25 minutes, or until the potatoes are golden brown and crispy on the outside, flipping them halfway through.
Add Cheese and Toppings:
Once the potatoes are done, remove them from the oven. Sprinkle the shredded cheese on top of the hot potatoes, and return them to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove the potatoes from the oven and garnish with sliced green onions, crumbled bacon, and fresh parsley. Serve hot and enjoy!
