Grate the zucchini, potatoes, and carrots. Place them in a large bowl and squeeze out any excess moisture from the zucchini and potatoes using a clean kitchen towel or your hands.
Mix the Ingredients:
Add the finely chopped onion, eggs, breadcrumbs, cheese, chopped parsley, salt, and black pepper to the bowl. Stir everything together until the mixture is well combined. If the mixture seems too wet, add a little more breadcrumbs.
Shape the Fritters:
Take a small amount of the mixture and shape it into a patty. Repeat with the rest of the mixture.
