Season the pork pieces with salt, pepper, paprika, and a tablespoon of vegetable oil. Mix well to coat the meat evenly.

Prepare the potatoes:
In a separate bowl, mix the potato slices with salt, pepper, and a bit of oil. Set aside.

Make the marinade:
In a small bowl, combine the soy sauce, ketchup, honey, and French mustard. Stir until well blended.

Marinate the pork:
Place the seasoned pork pieces in a bowl and pour the marinade over them. Let it sit for at least 30 minutes to allow the flavors to meld.

Assemble the skewers:
Alternately thread the pork pieces, potato slices, onion rings, and bacon (if using) onto skewers. Ensure that the skewers are packed tightly for even cooking.

Grill the skewers:
Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook, turning occasionally, for about 15–20 minutes or until the pork is cooked through and the potatoes are tender.

Serve:
Once cooked, remove from the grill and serve immediately. Enjoy your juicy, flavorful pork skewers with a side of your favorite salad or vegetables.
