In a small saucepan, bring the water to a boil. Add the oatmeal and a pinch of salt, then reduce the heat to low and cook for 5–7 minutes, stirring occasionally, until the oats are soft and the water has been absorbed. Set aside to cool slightly.
Mash the Bananas:
While the oatmeal cools, mash the ripe bananas in a bowl until smooth.

In a separate bowl, beat the eggs, stevia, and vanilla extract together until smooth. Add the mashed bananas and mix well.

Add the cooked oatmeal to the banana mixture and stir until fully combined. The batter will be slightly thick.

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners. Divide the muffin batter evenly between the muffin cups.
Bake:
Bake the muffins for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool for a few minutes before serving.
