Bake the Potatoes
Preheat your oven to 400°F (200°C). Wash and dry the potatoes, then pierce each with a fork a few times. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender. Once done, set aside to cool slightly.
Prepare the Beef Filling
While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the finely diced onion and cook until softened. Add the ground beef, garlic powder, smoked paprika, salt, and pepper. Cook until the beef is browned, then stir in the barbecue sauce. Remove from heat and set aside.
Create the Potato Volcanoes
Once the potatoes have cooled slightly, cut off the tops and scoop out most of the flesh, creating a deep cavity like a volcano.
Stuff the Potatoes
Fill each potato with the BBQ beef mixture. Top generously with shredded cheddar cheese and crumbled crispy bacon.
Melt the Cheese
Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish and Serve
Once out of the oven, garnish with chopped green onions and a dollop of sour cream if desired. Serve hot and enjoy the cheesy, bacon-filled goodness!
