Peel the potatoes and cut them into thin, even slices or small wedges. Heat a generous amount of olive oil in a large frying pan over medium heat.
Fry the Potatoes
Fry the potato slices in the hot oil until they are golden brown and crispy on the outside. Remove them from the pan and place them on a paper towel to drain excess oil.
Assemble the Toast
Lay the fried potatoes in a single layer on a baking sheet. Place a slice of provola cheese on top of each potato slice, followed by a slice of white ham.
Melt the Cheese
Preheat your oven or a broiler to medium-high heat. Place the baking sheet in the oven and broil for 2-3 minutes, or until the cheese has melted and is slightly golden.
Serve
Remove from the oven, sprinkle with salt and pepper, and serve hot. These French Fries Toasts are best enjoyed right away, crispy and gooey!
