Flour-Free Oatmeal, Apple & Carrot Cake

Preheat your oven to 350°F (175°C). Grease or line a baking pan (8x8 inches or similar) with parchment paper.

Mix Dry Ingredients:

In a large bowl, combine the oats, cinnamon, baking powder, baking soda, and a pinch of salt.

Prepare Wet Ingredients:

In a separate bowl, whisk together the eggs, applesauce, and vanilla extract. Stir in the grated apple, carrot, and olive oil.

Combine Everything:

Add the wet ingredients to the dry ingredients and mix until well combined. If using, fold in raisins or nuts for extra texture.

Bake:

Pour the mixture into the prepared pan and spread it out evenly. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.

Cool and Serve:

Let the oatcake cool for 10-15 minutes before slicing and serving.
