Easy and Healthy Spinach Egg Casserole

Heat olive oil in a skillet over medium heat. Add diced onion, red bell pepper, and minced garlic. Cook for about 3-4 minutes, until the vegetables are tender.

Add Spinach:
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.

Prepare the Eggs:
In a bowl, beat the eggs and season with salt and pepper. Pour the beaten eggs over the vegetable mixture in the skillet. Stir to combine.

Cook the Casserole:
Lower the heat and let the eggs cook for about 6-8 minutes, or until they are fully set and cooked through. You can cover the skillet with a lid to help cook the top of the eggs evenly.

Serve:
Once cooked, remove from heat and serve immediately.
