Crispy Fried Zucchini with Garlic and Veggies

Wash the zucchini and slice them into thin rounds. Sprinkle with a little salt and pepper, then set aside for 10 minutes to draw out excess moisture. Pat dry with a paper towel.

Prepare the Batter:

In a bowl, whisk together the eggs, mayonnaise, flour, breadcrumbs, paprika, vegetable oil, and water until smooth. Add a pinch of salt and pepper to taste.

Fry the Zucchini:

Heat olive oil in a large pan over medium-high heat. Once the oil is hot, dip each zucchini slice into the batter and fry them in batches until golden and crispy, about 2-3 minutes on each side. Remove from the pan and place on paper towels to drain excess oil.

Prepare the Veggies:

While the zucchini fries are cooking, sauté the garlic, onion, celery, red pepper, and tomato in a separate pan with a bit of olive oil. Cook until the vegetables are tender and fragrant, about 5-7 minutes. Add salt and pepper to taste.

Serve:

Serve the crispy fried zucchini topped with the sautéed vegetable mix. Garnish with fresh dill for an added burst of flavor.
