Creamy Spinach & Potato Cheese Cakes

Boil the diced potatoes in salted water until tender (about 10–12 minutes). Drain and mash.

In a pan, heat the olive oil and sauté the garlic for 1 minute. Add the spinach and cook for 4–5 minutes until wilted. Let cool slightly.

In a large bowl, combine mashed potatoes, cooked spinach, grated Parmigiano, mozzarella, egg, salt, and pepper. Mix well.

Shape the mixture into small cakes or patties.

Heat a non-stick skillet with a little olive oil and fry the cakes for 3–4 minutes on each side until golden brown and crispy.
