Chilled Cucumber Tomato Salad

In a large bowl, combine the cherry tomatoes, cucumber slices, and red onion.

In a separate small bowl, whisk together the olive oil, red wine vinegar, mustard, garlic, salt, and pepper until well blended.

Pour the dressing over the vegetables and toss gently to coat.

Chill the salad in the refrigerator for at least 20–30 minutes before serving.
