Cheesy Stuffed Rolled Potatoes with Minced Meat

Cook the Potatoes: Start by boiling the potatoes in a large pot of salted water until they are tender (about 15-20 minutes). Drain and let them cool slightly before peeling.

Mash the Potatoes: Mash the potatoes in a bowl until smooth. Add in the grated cheddar cheese, chopped parsley, eggs, salt, and pepper. Mix until well combined.

Prepare the Filling: In a separate pan, cook the minced meat over medium heat until browned and cooked through. Season with salt and pepper to taste. Set aside to cool.

Stuff the Potatoes: Take a small portion of the mashed potato mixture and flatten it into a disc shape. Place a spoonful of the minced meat in the center and then carefully roll it up to form a cylinder, encasing the filling.

Fry the Rolls: Heat a small amount of oil in a pan over medium heat. Place the rolled potatoes into the pan and fry on each side until golden brown and crispy, about 3-4 minutes per side.

Serve: Once crispy and golden, remove from the pan and place on paper towels to drain any excess oil. Serve hot with a side of dipping sauce or a simple salad.
