Cheesy Ranch Potatoes and Sausage

Slice the smoked sausage, dice the bell peppers, and chop the onion.

Cook the Sausage and Veggies:
In a large skillet, heat some oil over medium heat. Add the smoked sausage, bell peppers, and onion. Cook, stirring occasionally, until the sausage is browned and the veggies are softened, about 5-7 minutes.

Add the Hash Browns:
Stir in the frozen shredded hash browns and cook for another 5 minutes, stirring occasionally, until the hash browns begin to warm up and soften.

Make the Cheesy Sauce:
In a separate bowl, whisk together the heavy whipping cream, cheddar cheese soup, and ranch seasoning mix (if using). Pour this mixture over the sausage and potato mixture.

Combine and Cook:
Stir the mixture until it’s well combined. Let it simmer for about 10 minutes, stirring occasionally, to allow the flavors to meld together.

Add Cheese:
Once everything is well-cooked and heated through, sprinkle the shredded cheddar cheese over the top. Cover the skillet with a lid and let it sit for a few minutes until the cheese is melted.

Serve:
Once the cheese is melted and bubbly, serve the dish hot. Enjoy!
