Cook the fettuccine according to package instructions. Drain and set aside.

Prepare the Cajun Chicken:
Rub the chicken breasts with Cajun seasoning, garlic powder, salt, and black pepper.

Sear the Chicken:
Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5-6 minutes per side, or until golden and fully cooked. Remove the chicken from the skillet and let it rest before slicing it into strips.

Make the Alfredo Sauce:
In the same skillet, melt the butter and sauté the minced garlic for 1 minute until fragrant. Pour in the heavy cream and bring it to a gentle simmer.

Finish the Sauce:
Add the grated Parmesan cheese, nutmeg (if using), salt, and pepper to the sauce. Stir continuously for about 4-5 minutes, or until the sauce thickens to your desired consistency.

Combine with Pasta:
Toss the cooked fettuccine into the Alfredo sauce, making sure the pasta is well-coated.

Serve:
Top the creamy fettuccine with sliced Cajun chicken and garnish with fresh parsley. Serve hot and enjoy!
