Broccoli Cheddar Chicken Rollups

In a mixing bowl, combine the finely chopped broccoli (reserve about ½ cup for garnish), shredded cheddar cheese, garlic powder, onion powder, and softened cream cheese. Mix until well combined and smooth. Set the filling aside.

Prepare the Chicken:
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper. To flatten the chicken breasts, place them between two sheets of plastic wrap or parchment paper, then use a meat mallet to gently pound the chicken until it is even in thickness.

Fill the Chicken:
Spread a generous amount of the broccoli-cheddar mixture on each chicken breast. Roll each chicken breast tightly around the filling and secure the ends with toothpicks.

Coat the Chicken:
Crush the cheddar crackers into small crumbs and spread them out on a plate. Roll each chicken rollup in the crushed cracker crumbs until fully coated.

Bake the Rollups:
Place the chicken rollups in a greased baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Serve:
Remove the toothpicks before serving. Garnish with the reserved broccoli and a little extra shredded cheddar cheese if desired. Serve hot and enjoy your delicious chicken rollups!
