Banana Pudding Delight

In a medium saucepan, combine milk, sugar, cornstarch, and salt. Whisk together until smooth.

Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken, about 5-7 minutes.

In a separate bowl, whisk together the egg yolks. Slowly pour about a cup of the hot milk mixture into the egg yolks while whisking constantly. This is called tempering the eggs.

Pour the egg mixture back into the saucepan with the remaining milk mixture. Continue cooking for another 2-3 minutes, stirring constantly, until the pudding is thick and creamy.

Remove from heat and stir in the butter and vanilla extract. Let the pudding cool for a few minutes.

Assemble the Banana Pudding Delight:

In a serving dish or individual cups, layer vanilla wafer cookies, then add a layer of sliced bananas.

Pour a layer of the warm pudding over the cookies and bananas.

Repeat the layers until all the ingredients are used, finishing with a layer of pudding on top.

Chill and Serve:

Cover and refrigerate the dessert for at least 2-3 hours or until it’s chilled and set.

Before serving, top with whipped cream and an extra banana slice, if desired.
