Banana Cocoa Walnut Loaf

Preheat oven to 175°C (350°F). Line a loaf pan with baking paper or grease it well.

In a large bowl, mash the bananas until smooth.

Add eggs, sugar, oil, and vanilla. Mix until well combined.

Sift in flour, cocoa powder, baking soda, and salt. Stir until just combined—do not overmix.

Fold in chopped walnuts.

Pour the batter into the loaf pan and top with extra walnuts if desired.

Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
