Slice the pork loin into medallions or thick strips. Season with dried garlic, salt, and pepper.
In a deep skillet, melt butter over medium heat. Sear the pork pieces until golden brown on all sides. Remove and set aside.
In the same skillet, sauté chopped onion, carrot, bell pepper, celery, and zucchini until softened (about 8–10 minutes).
Add rosemary and basil, then return the pork to the pan.
Pour in a splash of water or broth if needed, cover, and simmer over low heat for 30–35 minutes until pork is tender and the sauce is thick.
Adjust seasoning and serve warm.
