Toast the dry ingredients (optional): In a dry pan, toast the peanuts, almonds, oats, and seeds separately until golden and aromatic (2–3 min each). Let cool.
Roughly chop the almonds and peanuts if desired for texture.
In a large bowl, mix all the dry ingredients together.
Warm the honey slightly in a small pot (or microwave) so it becomes more liquid.
Pour the warm honey over the dry mix and stir well until everything is coated.
Line a square dish or tray with parchment paper. Press the mixture firmly into an even layer.
Melt the chocolate gently and drizzle over the top. Sprinkle with sea salt flakes.
Refrigerate for at least 1–2 hours until firm. Cut into bars or squares.
