Spinach and Feta Egg Bake – A Savory, Protein-Packed Meal

Preheat your oven to 180°C (350°F).

Sauté the Vegetables:
In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing until the onions are soft and translucent, about 5 minutes. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.

Prepare the Egg Mixture:
In a mixing bowl, whisk together the eggs, milk, and flour until smooth. Season with a pinch of salt and pepper. If you like a spicy kick, add the chopped chili pepper.

Combine and Assemble:
Add the sautéed spinach mixture into a greased baking dish. Pour the egg mixture over the spinach. Sprinkle the crumbled feta cheese and grated mozzarella cheese evenly over the top.

Bake:
Place the dish in the preheated oven and bake for 30-35 minutes, or until the eggs are fully set and the top is golden brown.

Serve:
Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
