Spicy & Refreshing Homemade Ginger Elixir

Bring the water to a boil in a saucepan.

Add the sliced ginger and reduce heat to simmer for 15–20 minutes.

Strain the liquid into a jug or teapot.

Stir in lemon juice and honey while the drink is still warm.

Serve hot, or let cool and refrigerate to serve cold.
