Rustic Italian Cottage Cheese Cake (No Crust, No Fuss!)

Preheat the oven to 170°C (340°F) and line a small baking dish or loaf pan with parchment paper.

In a mixing bowl, combine the cottage cheese, sugar, egg yolks, and vanilla. Mix until smooth.

Add the melted butter and salt. Stir to combine.

Gradually add the flour, mixing until you get a thick, but pourable batter.

Pour the batter into the prepared dish and smooth the top.

Bake for 35–45 minutes or until golden and set. Let cool before slicing.
