Pastina Soup – Comfort in a Bowl

Prepare the Soup Base:
In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes soft and translucent. If you're using garlic or carrot, add them now and sauté for another 2 minutes until fragrant.

Add the Broth:
Pour in the chicken broth and bring it to a simmer. Once it’s simmering, add the pastina pasta and cook according to package instructions, usually around 4-5 minutes.

Season:
Season the soup with salt and pepper to taste. You can add fresh herbs like thyme or bay leaves for extra flavor if you like.

Serve:
Once the pasta is tender and the soup has thickened slightly, remove it from the heat. Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot!
