Mustard-Crusted Filet Mignon with Roasted Vegetables

1 tablespoon Dijon mustard

2 tablespoons fine breadcrumbs

1 teaspoon garlic powder

1 teaspoon dried thyme

For the roasted vegetables:
500 g baby potatoes

3 carrots

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon herbes de Provence
