1️⃣ Activate the yeast
Dissolve the fresh yeast and sugar in warm milk. Let it sit for 10 minutes until foamy.
2️⃣ Make the dough
In a large bowl, combine flour, salt, egg, and melted butter. Add the yeast mixture and knead for 8–10 minutes until smooth and elastic.
Cover and let rise in a warm place for 1 hour, or until doubled in size.
3️⃣ Shape and fill
Divide the dough into 12 portions. Flatten each ball and place a piece of chocolate in the center. Pinch and seal the edges to enclose the chocolate.
Place on a baking tray lined with parchment paper, seam-side down. Cover and let rise for another 20–30 minutes.
4️⃣ Bake
Preheat oven to 180°C (350°F). Brush each bun with egg yolk and milk mixture.
Bake for 20–25 minutes until golden brown.
