Preheat your oven to 180°C (350°F). Grease and flour a 9x13 inch (23x33 cm) baking pan or line it with parchment paper.
Mix Wet Ingredients:
In a large bowl, whisk together 4 eggs, 1.5 cups of granulated sugar, 1 cup of milk, and 1 cup of oil. Beat until the mixture is smooth and well combined.
Combine Dry Ingredients:
In a separate bowl, whisk together 2.5 cups of flour, 2 packets of baking powder, 1 packet of vanilla, and 1 teaspoon of cinnamon.
Add Dry to Wet Ingredients:
Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Fold in Carrots and Walnuts:
Stir in 2 cups of grated carrots and 1 cup of chopped walnuts. Mix gently to combine.
Bake:
Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Cool and Serve:
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve!
