Preheat the oven to 350°F (175°C).
Heat olive oil in a large pan over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the diced green peppers and garlic to the pan, and cook for another 2 minutes until fragrant.
Stir in the diced tomatoes, tomato paste, salt, black pepper, paprika, and dried basil. Let it cook for 5-7 minutes until the tomatoes break down and form a sauce.
Add the cubed zucchini to the pan, mixing everything well. Cook for another 5 minutes, just to soften the zucchini slightly.
Transfer the mixture to a casserole dish and top with grated cheese.
Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
