8 oz cream cheese, softened
1/2 cup sugar
1/2 cup mashed sweet potato
1 egg
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
Instructions:
Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
In a bowl, whisk together melted butter, sugar, eggs, and vanilla for the brownie layer. Stir in cocoa powder, flour, and salt until just combined. Pour the batter into the prepared pan and set aside.
Using an electric mixer, beat cream cheese and sugar for the cheesecake layer until smooth. Add in mashed sweet potato, egg, vanilla, cinnamon, and nutmeg, and mix until well combined.
Carefully spoon the cheesecake mixture over the brownie batter in the pan and spread evenly.
Bake for 30-35 minutes, or until the center is set. Allow the brownies to cool completely in the pan.
Once cooled, chill in the refrigerator for at least 2 hours before slicing into squares and serving.
