Cook the Steaks:
Preheat a grill or skillet over medium-high heat.
Season the steaks with salt and pepper.
Drizzle the olive oil over the steaks and cook for about 4-5 minutes per side for medium-rare doneness (adjust time for desired doneness).
Let the steaks rest while you prepare the sauce.
Make the Peppercorn Sauce:
In the same skillet, melt butter over medium heat.
Add the crushed peppercorns and cook for 1-2 minutes until fragrant.
Add the brandy or cognac (if using) and cook for another 1-2 minutes to reduce.
Stir in the beef broth and simmer for 4-5 minutes.
Add the Dijon mustard and heavy cream, then let the sauce simmer for another 3-4 minutes until thickened. Season with salt to taste.
Prepare the Fries:
Preheat oven to 425°F (220°C).
Toss the potato fries in olive oil and season with salt.
Spread the fries on a baking sheet in a single layer.
Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Serve:
Plate the steaks and drizzle the peppercorn sauce over the top.
Serve with crispy French fries on the side.
Garnish with fresh parsley if desired.
