Heat olive oil or butter in a large pan over medium heat.
Add the chopped onion and cook for 2-3 minutes until softened and golden.
Stir in the minced garlic and grated carrot, and cook for another 2 minutes.
Add the thinly sliced cabbage to the pan. Toss everything together, making sure the cabbage is well coated with the oil and aromatics.
Cover the pan and cook for 10-12 minutes, stirring occasionally, until the cabbage becomes tender and slightly caramelized.
Season with salt, pepper, and optional thyme or apple cider vinegar for extra flavor.
Serve hot as a side dish or light main course.
