Preheat your oven to 375°F (190°C).
In a large oven-safe skillet or baking dish, combine rice, chicken broth, chopped onion, minced garlic, paprika, thyme, salt, and pepper.
Nestle the chicken thighs into the rice mixture, skin side up.
Sprinkle extra paprika and thyme on top of the chicken.
Cover the dish with foil or a lid and bake for 35 minutes.
Uncover and bake for another 15–20 minutes, or until the chicken is golden and the rice is tender.
Garnish with freshly chopped parsley before serving.
