No-Bake Date and Nut Chocolate Bites

In a food processor, combine the dates and mixed nuts. Blend until the mixture is finely chopped and begins to come together.

Add cocoa powder, dark chocolate, sea salt, and vanilla extract (if using). Pulse until everything is fully incorporated.

Roll the mixture into bite-sized balls using your hands. If the mixture is too sticky, wet your hands slightly to make rolling easier.

Place the balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.

Enjoy immediately or store in an airtight container in the fridge for up to a week.
