Cook the pork: Heat oil in a pan, season pork with salt and pepper, and brown it on all sides. Set aside.
Sauté the vegetables: In the same pan, add onion, carrots, celery, and garlic. Cook for 5 minutes. Add zucchini, red bell pepper, herbs, and broth. Let simmer for 10 minutes.
Prepare the mashed potatoes: Boil peeled potatoes until soft, then mash with milk and butter. Season with salt and pepper.
Assemble the casserole: In a greased baking dish, layer the pork, then the sautéed vegetables, and spread mashed potatoes on top.
Bake: Preheat oven to 190°C (375°F). Bake for 30 minutes or until the top is lightly golden. Optional: Sprinkle cheese on top and bake an extra 10 minutes.
