Guilt-Free Oatmeal Cookies

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, combine the oats, cranberries, lemon zest, chopped walnuts, and dates.

In a separate bowl, whisk the egg and melted butter together until smooth.

Pour the egg and butter mixture into the dry ingredients and stir well to combine.

Scoop tablespoon-sized portions of the dough and place them on the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on a wire rack before serving.
