Garlic Herb Shrimp & Veggie Power Bowl

Roast the Potatoes:
Preheat the oven to 425°F (220°C). Toss the diced potatoes with olive oil, oregano, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes until golden and crispy.

Grill the Shrimp:
Mix shrimp with olive oil, paprika, garlic powder, salt, and pepper. Grill or sear in a hot skillet for 2–3 minutes per side until opaque and slightly charred.

Prepare the Sauce:
In a small bowl, stir together yogurt (or sour cream), minced garlic, dill, chives or parsley, lime juice, and salt. Refrigerate until ready to use.

Assemble the Bowl:
In each bowl, layer roasted potatoes, grilled shrimp, and halved cherry tomatoes. Drizzle with the garlic herb sauce and garnish with lime wedges and extra herbs.
