Preheat oven to 425°F (220°C).
Toss baby potatoes in olive oil, salt, pepper, and garlic powder.
Roast on a tray, cut side down, for 20–25 mins or until crispy and golden.
2. Cook the Steak:
Season steak with salt and pepper.
In a hot skillet, sear steak with olive oil for 3–4 mins per side (for medium-rare).
During the last minute, add butter, garlic, thyme, and mustard.
Baste the steak with the melted butter sauce. Let rest for 5 mins, then slice.
3. Assemble & Serve:
Plate the roasted potatoes and sliced steak.
Spoon the garlic butter sauce from the pan over the steak.
Garnish with fresh parsley and serve hot!
