Add all ingredients to a blender or food processor.
Blend until smooth. If it’s too thick, add a bit more pickle juice or vinegar.
Taste and adjust seasoning or heat level (add another jalapeño or habanero if desired).
Pour into a small saucepan and bring to a gentle simmer for 5–7 minutes to deepen the flavor.
