Chipotle Ranch Grilled Chicken Burrito

Marinate the chicken: In a bowl, mix the chicken marinade ingredients (olive oil, garlic, lime juice, chipotle chili powder, paprika, cumin, salt, and pepper). Coat the chicken thoroughly and let it marinate for at least 30 minutes.

Grill the chicken: Preheat your grill or grill pan over medium heat. Grill the chicken for about 5-7 minutes per side, or until fully cooked and tender.

Make the chipotle ranch sauce: In a small bowl, combine ranch dressing, chipotle peppers in adobo sauce, lime juice, garlic powder, and salt. Blend until smooth.

Assemble the burrito: Lay a tortilla flat, and layer it with grilled chicken, fresh tomatoes, red onion, cilantro, jalapeƱo (optional), lettuce or spinach (optional), shredded cheese, avocado or guacamole (optional), and a generous drizzle of chipotle ranch sauce. Roll up the tortilla and serve!
