Cook the rice according to the package instructions and set aside.
Grate the zucchinis and squeeze out any excess moisture using a clean kitchen towel or cheesecloth.
In a large mixing bowl, beat the eggs and add the grated zucchini, cooked rice, flour, and a pinch of salt. Mix well to combine.
Add the chopped spinach, chive, and grated cheese to the mixture and stir until everything is evenly distributed.
Heat a little oil in a pan over medium heat. Spoon the zucchini mixture into the pan to form small patties or pancakes. Cook each side for 3-4 minutes, until golden and crisp.
Serve hot as a main dish or a side with your favorite protein.
