Wash the oranges and carrots thoroughly. Peel both the oranges and the carrots.

Cut the oranges into small pieces, making sure to remove the seeds.

Grate the carrot into thin strips or chop it into small pieces.

If using, peel and chop the apple into small pieces.

Cook the Jam:

In a saucepan, place the orange pieces, grated carrot, and lemon juice.

Add the apple if you're using it for added pectin.

Pour in 1/2 cup of water and add 1 teaspoon of cinnamon if desired.

Cook over medium heat for 30-40 minutes, stirring occasionally, until the mixture begins to soften and break down.

Blend the Mixture:

Use an immersion blender or a food processor to puree the cooked mixture until it reaches a smooth consistency.

Final Cooking:

Return the blended mixture to the saucepan and cook over low heat for another 10-15 minutes, stirring constantly until the jam thickens to your desired consistency.

Jar the Jam:

Pour the hot jam into sterilized jars, leaving a little space at the top.

Seal the jars immediately to create a vacuum seal.
