Preheat oven to 180°C (350°F).
Grease a muffin tin and add diced onion, green bell pepper, and bacon (if using) to each cup.
In a bowl, whisk together eggs, milk, salt, and pepper.
Pour the egg mixture evenly over the fillings in each muffin cup.
Bake for 20–25 minutes or until set and golden on top.
Let cool slightly and enjoy!
Tip:
Store in an airtight container in the fridge for up to 4 days. Reheat in the microwave for a quick breakfast!
